If ePub Exporting has been enabled for your course, you can view your course offline as an ePub file. You can download the ePub file and upload it into any eReader software for viewing, such as iBooks or Azardi.

ePub content is for offline viewing only; you cannot interact with course content directly, such as completing an assignment or viewing any submissions. In an ePub file, you can view assignment details, availability dates, and point values. Discussions include the discussion topic. All discussion replies (graded or ungraded) are considered submissions and must be viewed online. Additionally, you can view any embedded media files in the ePub. Any files that aren't supported in the ePub format, such as file attachments or PDFs, can be downloaded to be viewed in the file's native environment.
If the course includes files that aren't supported in the ePub, click the Download Associated Files link [2]. Associated files download in a ZIP file and contain all unsupported files, such as media files and Microsoft Office documents.
If you've bought a book online recently, or downloaded a free public domain book at a site like Project Guttenberg, there's a good chance that it's a .mobi file. But you probably weren't able to open it because you didn't have the right software installed.
You can move the unpacked archive content wherever you want in your file system.But please be careful to always keep together all the files, especially the epubcheck.jar file (the EPUBCheck binaries) and the lib/ directory (the dependencies binaries).
Alternatively to the previous method, you can possibly download and install EPUBcheck from a package manager.This method can be easier as it will typically create an epubcheck command that you can run anywhere in your file system (without having to call it through the java command).
One of the most beloved tools of indie authors, Vellum is an intuitive software that helps you design, format, and export great-looking ebooks, in EPUB format. I still occasionally have issues with syncing, even epubs i bought from the bookstore vs. uploaded into Books. Between iPad and Mac seems reliable, phone is a crap shoot (all devices on latest 16.1 betas)
I downloaded a non-Apple epub on my iPhone running IOS 16.0.2. I then opened Files and the Download folder and tapped the newly downloaded epub. It opened. Closing the file showed it as the most recent addition to Apple Books (which I confirmed by opening Apple Books on my computer).
On the Mac, just double-click the epub. If Books is your default app for epub, that will import it. (Otherwise, Open With Books.) As long as Books is set to sync in iCloud, that will also copy it to your other devices.
@jimthing As I was told by an author, while Amazon now accepts epub files, they convert them to mobi files before putting them in the Kindle Store. I then have to use Calibre to convert them back to epub so I can upload them to my iPad Minis.
Before ePub files can be transferred to your iPhone using any method, a compatible app must be installed on the phone. Launch the App Store on your iPhone by tapping its icon on the Home screen. Search for an ePub compatible application such as iBooks, Stanza or Bluefire Reader. Tap the application to open its full product page, followed by the "Free" button. Tap the button again when its text changes to "Install" to download and install the ePub-compatible app. Install multiple apps if you want to test out different ones.

if the additon of --toc and --chapters does not produce the desired results, leave these out. Sometimes the pictures inside the epub are invalid to be used with latex so you need to convert them in the process :
Extract images and other media contained in the epub container to the path DIR, creating it if necessary, and adjust the images references in the [LaTeX] document so they point to the extracted files, with the option --extract-media= DIR . Select the current directory which also contains the ePub file. Add --extract-media=. which means extract in the current directory, which is also $HOME/Documents 2ff7e9595c
